What to make for Dinner when your Exhausted

My tiny human is now two months old, yesterday was his checkup and first round of shots. Also following along with his development he's in his second leap based on The Wonder Weeks. What this means for me is he is more clingy and seemingly more needy, for an infant that says something. So I spent my day holding and trying to comfort my baby as his body is in a bit of discomfort and his mind is growing faster than he understands.


By the time my husband got home I was exhausted, and ready for the day to be done. Of course we No Plan menu. So I went into the kitchen after getting the little man to sleep, this could not have been more simple.

We took one chicken breast and cut it into four smaller pieces, seasoned with salt and pepper, then covered them each in a teaspoon of pesto (store bought or homemade). Bake for 15 min at 400 degrees. While that's baking slice a tomato into thin slices, and shred some mozzarella and Parmesan. Using the simple slicer made cutting the tomatoes super fast.  Take chicken out cover each piece with a tomato slice and some cheese bake another 3-5 minutes. We served it with some couscous on the side that we added a bit of Parmesan too also. My husband called it a really good healthy meal, he's not always big on the healthier choices out there.
